I love when a new year begins because it means a fresh start with new goals! This year I’m moving away from the long list of resolutions that by the end of January I’ve already given up most of them. I’ve decided that splitting all my efforts on an unrealistic number of goals to better myself is useless, instead I’ve only chose five things to focus all my energy on. Being healthy is on the top of that list – with our wedding seven months away and my sister’s wedding three months away, I have a set goal in mind for how I want to look and feel for each day. Focusing down on only a couple goals has really helped me stay on track, I mean it’s the end of February and I’m still on top of my goals and making huge progress which is a total shock for me!
These past couple months all my energy has gone into exercising and eating healthy. It’s not something that has come natural to me since graduating college but I must say, I have finally got into a rhythm with early morning gym sessions before work and meal planning thanks to Brendan. Today I’m sharing with you my favorite fresh green juice recipe to make after working out. It’s so refreshing with the cucumber and lemon and by adding the apple the consistency is naturally sweet and just so yummy. This delicious combination will totally make you forget that you’re getting in your daily greens and will rejuvenate you at the same time.
Since starting the new year I’ve started a workout and eating program I’m sure you’ve heard of called Bikini Body by Kayla Itsines, along with getting back into the habit of making my green juice when we get home from the gym in the morning. When we lived in San Francisco, Brendan and I would make a juice each morning but that totally stopped when we moved to Las Vegas. Honestly, I can’t even tell you the difference I feel from eating healthier and working out every day, whether it’s Kayla’s high intensity circuits or cardio it’s the perfect way to start your day.
There’s nothing that gets my morning started quite like a fresh green juice to help my rejuvenate after a good sweat session, and I can’t wait for you to try it and tell me what you think! This truly is the most delicious green juice you can make at home and it’s so simple to make with only a couple ingredients.
- 1 Whole cucumber
- 2 Small – medium size apples
- 4 Celery stalks
- 1 Lemon
- 2 Cups kale
- About 8-10 mint leaves without stems
- Chia seeds, optional
Juicing the greens: Wash the mixed greens and fruits and set them aside to dry. Once dry, chop the apples and lemons in half if necessary. I personally like to add a handful of ice cubes to the juice container, so once the juice comes of the spout its chilling right away. One ingredient at a time – place the cucumber, apples, celery, and lemon, mint leaves and kale in the feed tube.
Take a spoon and stir all the combined ingredients in the juice container mixing the consistency. Add chia seeds, if you’d like and refrigerate until ready to use. Enjoy!
